Bayan-Ulgii is Mongolia’s only Muslim and Kazakh-majority aimag and was established in 1940 as a refuge for persecuted Muslim Kazakhs. Representing a unique mixture of Mongolian and Kazakh culture and language, traces of Russian, Turkish, and Arabic influences can also be found throughout the city center. The provincial capital Ulgii has its own distinct Central Asian character, with a buzzing bazaar, numerous mosques, and a central square where locals love to meet when the weather is warm. Traditional Kazakh foods will revitalize you after your day’s journey. Kazakh cuisine like besbarmak (boiled meat with noodles that translates to “five finger” food) and kazy (salted horse sausage) mark the region’s traditional style of food preparation. Fermented mare’s milk known as kumis is also a must-try to quench your thirst.
